台中太平二代傳承瑞達香麵包店 用抹茶蛋黃酥創新口味

瑞達香麵包店是在地人的回憶,在今年他們將推出多款中秋節禮盒,其中抹茶蛋黃酥是最大的亮點。是年輕的老闆用創意與巧思,將抹茶蛋黃酥製做成人人都愛的風味。黃老闆表示:「這款抹茶蛋黃酥從材料的選擇到比例的調配,經過了無數次的失敗最後才成功找到合適抹茶與調配比例。剛開始製作時抹茶味太重,把鹹蛋黃的味道壓下去。又或者是抹茶苦澀的味道,影響著整顆蛋黃酥。」

現在這款抹茶蛋黃酥成功的將抹茶融入豆沙與酥皮後,抹茶的茶香氣使得口感清新爽口許多,茶香風味淡雅細膩;相較於原本的紅豆沙來說,抹茶豆沙的口感更加綿密細緻,為了將抹茶苦味蓋掉甜度雖然稍高一些,但並不顯甜膩。

每一種口味的蛋黃酥都是使用整顆像硬幣一樣大的鹹蛋黃,每一顆鹹蛋黃噴上高粱酒之後再行烘烤,去除鹹蛋黃的腥味。蛋黃酥中的紅豆沙,是獨家特調的配方,除了紅豆香氣明顯甜度適中,綿密的紅豆沙讓蛋黃酥吃起來更美味。

「芋頭蛋黃酥芋頭沙」口感綿密細緻,吃起來的芋頭香淡雅自然,不顯甜膩,與鹹蛋黃的香氣鹹甜交織,層次感非常鮮明。

瑞達香麵包店是在地的好鄰居,很多人是吃這間麵包店長大的。目前已經交棒給第2代兄弟檔經營,每天一樣有許多老主顧的蒞臨。在今年中秋節,希望延續著去年的熱潮,中秋節檔期將推出傳統蛋黃酥禮盒、綠豆椪禮盒與鳳梨酥禮盒。綠豆椪與鳳梨酥都是第一代老闆傳承下來的心血,綠豆椪選用自家手炒滷肉,和綿密而不甜膩的綠豆沙,讓綠豆椪能夠裡面吃起來順口、綿密。土鳳梨酥則是選用台農17號的金鑽土鳳梨,甜度和品質都非常的合適。鳳梨酥在外皮上使用了進口奶油上,能夠在烘培後外皮覆蓋著奶油的香氣,在咬下去的每一口中都能夠讓奶油的香氣包圍著鳳梨的甜度。是許多老饕們不斷回購的原因。
